Weekend Winter Food: Mozzarella Pesto Tomato Sandwich

Let’s be honest— some of us enjoy being lazy on the weekends and cooking is the least of our worries. However, as humans our stomachs beg to differ. I found a super easy recipe that is delicious and a little on the healthy side. 

MOZZARELLA TOMATO PESTO SANDWICH
WHAT YOU’LL NEED:

1½ tsp olive oil

2-3 tomato slices

2 slices sandwich bread

pesto sauce (homemade or barilla)

2 tbsp shredded mozzarella(or fresh mozzarella)

This recipe is perfect for those of you who have a panini maker, and if you don’t no worries your oven works just fine!

Place bread on baking sheet (aluminum foil also works). Spread your pesto sauce then place your mozzarella and tomatoes.  To top it all off sprinkle a little olive oil on your ingredients.

For panini maker — place sandwich in panini maker until bread is toasted golden brown and cheese is slightly melted.

For oven— set oven to 350 degrees. Place sandwich open in the oven for about 30 seconds until cheese is melted. Close the sandwich, sprinkle olive oil on one side and toast for about 60 seconds or until golden, repeat on other side.

Simple recipe that will probably take about 10 minutes total including prep time!
